Cornbread low-fat

Ingredients
1 cup unbleached all purpose flour1 cup yellow cormmeal2 tbs sugar2 tsp baking powder1 tsp salt1 cup nonfat milk1/4 cup unsweetened applesauce2 egg white or 1 whole egg
Directions
Preheat oven to 425 degrees F. Spray an 8 inch nonstick pan lightly with nonstick spray. In a medium bowl, stir together flour, cornmeal, sugar, baking powder and salt. Add milk, applesauce, and egg or egg white. Put the prepared pan in the oven to preheat for a minute or 2. Be careful not to overheat since cooking spray burns easily. Stir lightly but do not overmix, just blend. Pour into prepared pan. Bake until top is lightly browned and springs back when touched, or insert toothpick, if clean, it is done. Bake about 20 minutes.
