African Peanut Chicken Soup

2 med onions2 peppers ( red, yellow, green)2 TBLS oil4 cloves garlic3 pints canned tomatoes (pureed)8 cups chicken stock (2 tetra packs)1/4 tsp black pepper1/4 tsp crushed red chillies1/4 cup taco seasoning (or to taste)3 chicken breasts1/2 cup rice (wild, brown whatever)2/3 cup peanut butter
Place seasoned chicken breasts in tin foil in 350 F degree oven. Saute' onion, peppers and garlic in oil in a large stock pot. Add pureed tomatoes, chicken stock, pepper, crushed chilli peppers, and taco seasoning and simmer for one hour. Add rice and simmer for 30 minutes. Use a hand blender to puree the soup in the pot. Cut the chicken breasts in tinny little pieces and add the juice you got when you cooked them and the meat to the pot, cook for 30 mins. Whisk in the peanut butter and serve. Makes 10, 1 1/2 cup servings.
