No Sugar Added Coconut pie

1 cup graham cracker crumbs 4 tbsp butter melted 1/4 cup Stevia Extract In The Raw Sugar Substitute 2 4 serving packages Jello sugar free fat free instant vanilla pudding mix 2 cup skim milk 1 cup shredded sweetened coconut8 ounce package Cool Whip (Sugar Free), thawed
Heat oven to 350 degrees. Mix melted butter and stevia, adding in graham cracker crumbs. Press into 8 or 9 inch pie plate. Bake in oven for 10 minutes. Cool while mixing other ingredients. Put pudding mix in a large bowl, add milk and whisk together. It will become thick quickly. Mix half of sugar free Cool Whip into pudding mixture. After well mixed, add coconut. Pour mixture into pie crust. Add remaining Cool Whip on top of pie. May sprinkle additional coconut onto top. Refrigerate.
