2 cup, cubes Sweet potato 6 slice (1 oz) Provolone Cheese 16 oz Turkey Sausage, Jenny-O Breakfast Sausage (by LVETCHG) 1 medium (2-1/2" dia) Onions, raw 1 large (2-1/4 per lb, approx 3- Peppers, sweet, red, fresh 12 large Egg, fresh, whole, raw 1 package (10 oz) Spinach, fresh .5 cup Silk Unsweetened Soy Ultra (by JODIHAUSE)
Cook sausage and onion together, when both are cooked, add the spinach until it is wilted. Drain the entire mixture. Spray a 9X13 pan with cooking spray, then put the sweet potato cubes in the bottom of the pan, put the drained turkey mixture on top, and add the chopped red peppers. Then beat the eggs with half a cup of milk, pour into pan, and top with cheese. Bake at 350 until knife inserted comes out clean.
