Ingredients
10 oz package Cherry Tomatoes 2 Tomatoes, Roma3 oz Baby Carrots 8-111/2 large Red Onion Diced1 tbsp Smart Balance Omega Light2 tsp Chicken Bouillon2 cup Water1Cup Cottage Cheese 2% 1clove Garlic2 tsp Splenda/Swerve
Directions
Saute Veg together till tender. Add water & Bouillon. Bring to boil - Turn down heat to med/low Simmer for 20 mins. Add Cottage cheese. Puree till smooth. Add sugar to taste. Top with parm, romano or nutritional yeast &/or fresh basil chiffonade.
