Cottage Cheese Egg Muffins

Ingredients
6 large Egg, fresh, whole, raw1.5c stir fry vegetables (Walmart's Great Value)0.5c cottage cheese, Walmart's Great Value, 1% Lowfat0.5c shredded Cheddar Cheese0.5t Baking Powder0.5t Mrs. Dash (R) Original Blend
Directions
Preheat oven to 350.  Spray red muffin tin with cooking spray and place on cookie sheet. Whisk eggs.  Stir in other ingredients. Divide mixture evenly into muffin tin.  Bake for 20-25 minutes until eggs are puffed up and cooked through.
