Turkey Larb Gai / Thai Lettuce Wrap

Ingredients
1 lb lean ground turkey or chicken1 tsp sesame or canola oil1/2 medium onion, diced4 tsp ginger root, minced (or 2 tsp ginger powder) 2 cloves garlic, minced 1 tsp Chinese five spice or ground cinnamon 1 thai or chili pepper, minced (optional)1 oz pineapple or orange juice 2 tbsp Low Sodium Soy Sauce 2 cups brown rice, cooked divided 1 head of leaf or romaine lettuce, washed and prepared for lettuce wraps Thai basil leaves, chiffonade (optional)
Directions
1. In a saute pan over medium heat, put sesame or canola oil. Heat and turn to coat pan.
2. Add ground turkey or chicken. Add onions, garlic and ginger and cook until meat is no longer pink. (about 5 minutes)
3. Deglaze pan with pineapple or orange juice. Add Chinese five spice (or cinnamon) and soy sauce. Stir to combine.
4. Divide turkey mixture into 4 and serve with 1/2 cup of brown rice and 2 lettuce leafs. Garnish with thai basil and thai hot sauce if desired.
