Pan Fried Cod Fillets

Ingredients
1 pound cod fillets (cut into 3 equal pieces)1/4 cup all purpose flour1/4 teaspoon salt1/8 teaspoon black pepper1/8 teaspoon paprika1 large egg, mixed with fork1/2 tablespoon unsalted butter1 tablespoon extra virgin olive oil
Directions
Dry fish fillets with paper towels and set aside.

Heat butter and olive oil over medium to medium low heat in a nonstick pan.

Mix together flour, salt, pepper, and paprika.

Dredge the fish in the flour first then dip into the egg, covering both sides. Add to pan and cook 3 to 4 minutes on the first side and 2 to 3 minutes on the second side, depending on thickness of fish.

Pat excess fat off fish after cooking if desired.
