Mix the ingredients together; you can portion it as you like, but I do 1/2 avocado, 1/2 plum tomato. 4 tbsp fat-free sour cream, a dash of S&P and lime, and a little finely chopped red onion. Spread, cold, on the Pinto Bean Falafel. Mmmm!
