Veggie Rice

Ingredients
1.75 cup White Rice, medium grain 1.5 tbsp Canola Oil 1 tsp Salt .50 cup, strips Green Peppers (bell peppers) .25 pepper, large (3-3/4" long, 3" Yellow Peppers (bell peppers) 1 stalk, large (11"-12" long) Celery, raw 1 cup Yellow Sweet Corn, Canned Water 2 cups
Directions
Dice all vegetables
In a saucepan, add the oil and all veggies and saute them for about 3 minutes
Add rice and salt and pepper
Add 2 cups of water and let it cook covered until water is evaporated
Low heat and cook covered for ten minutes
Serve hot
