Crustless cheese cake -- Adapt Phase 1 (MBG)

Ingredients
20 oz Philadelphia Cream Cheese, softened just above room temperature.3 large Egg Yolks -- slightly above room temperature3 large Eggs 1 tsp. Better Stevia liquid organic extract.1 tbsp Vanilla Extract 1 tsp Pure Almond Extract.Boiling water for water bath.
Directions
Line 8 inch springform pan with parchment. Wrap outside of pan tightly with aluminum foil. Preheat oven to 325 degrees F.
In mixing bowl of stand mixer, beat cream cheese with paddle attachment until slightly fluffy. Add egg yolks, and whole eggs, one at a time; beat after each addition. Add stevia, and extracts; beat until smooth.
Pour gently into prepared springform pan; smooth top. Set springform pan into a roasting pan (at least 1-2 inches larger than pan.) Place pans onto extended oven rack (upper 1/3 of oven), and carefully pour in boiling water to at least 1 inch depth. Close oven. Bake until set in center, about 30-40 minutes. Turn off oven; crack door open with wooden spoon and let set in oven another 15-20 minutes.
Remove from oven, lift from waterbath, and remove foil. Place springform on cooling rack for 30 minutes. Cover and chill several hours or overnight.
Remove sides of pan to slice and serve. Slice into 8 wedges.
