No Chips / No Cheese Wow Taco Salad

Shredded pre-cooked chicken - we used 2 leftover chicken thighs2 Banana peppers - or Poblanos1 c. red kidney beans - or you can use black beans (slightly higher calorie) - or whatever you have in pantry works!1 c. salsa - or can or "Rotel" style tomato works tooMixed dark greens salad - BIG BOWL!
Slice Peppers into narrow strips or rings (remove all seeds).
In large skillet over med high heat place drained beans and peppers. Cover. Let mix steam until peppers start to soften - approx 10 minutes.
Shred chicken and mix into skillet, add salsa - turn heat down to low and cover.
Let flavors combine for approx 10 minutes - or until it smells too good to resist!
Meanwhile make your fav salad in a BIG BOWL - place 1/2 of chicken mixture on top of salad.
No need to add dressing - just mix heated mix with salad greens.
You won't miss the chips or cheese!
