Blueberry Bisquick Pancakes

Ingredients
2 cups Bisquick3 tablespoons sugar2 1/2 teaspoons baking powder1 cup whole milk2 large eggs2 tablespoons vegetable (canola) oil1 teaspoon vanilla extract1 cup fresh blueberries (frozen can be used but drain well)
Directions
Whisk together eggs, milk, oil, and vanilla. Whisk together Bisquick, baking powder, and sugar.

Add dry ingredients to wet 1/3 at a time. Don't overmix. Let batter rest about 30 minutes. Add blueberries.

Lightly grease (with spray or canola oil on a paper towel) a griddle or skillet. Drop batter by 1/3 cups and cook until bubbles form on first side. Flip and cook another minute or two.

Serving Size: Makes 7 servings of 2 pancakes each
