Broccoli Salad (with Water Chestnuts and Cherry Tomatoes)

Ingredients
1 bunch broccoli - sliced thin (~6 cups)5 stalks celery - sliced thin (~3 cups)1 can water chestnuts (1 cup)1 box cherry tomatoes (~2 cups)onions - chopped fine (1/2 cup Vidalia)fresh ground pepper1 pkg Good Seasons Italian Dressing mix - prepared (mushrooms - optional)
Directions
* Mix all ingredients together. Let stand 24 hours.

* This makes 12 one-cup servings.

* When preparing the Italian dressing, I use 1/4 cup of EVOO (extra virgin olive oil) instead of the 1/2-cup recipe version on the package.
