Cold Sesame/Peanut noodles

Ingredients
* Bragg Liquid Aminos, 1/2 tsp. * Nakano Natural Rice Vinegar, 2 Tbsp * red pepper flakes, 1/3 tsp or to taste * Brown Sugar, 2 Tbsp, packed * *Kroger Natural Crunchy Peanut Butter, 8 Tbsp * Sesame Oil, 1 Tbsp * Ginger, ground, 3/4 tsp or to taste * raw brown rice spaghetti, 1 lb.
Directions
Bring a big pot of water (like a dutch oven) to a boil. Then add a one pound box or bag of brown rice spaghetti. Let it boil for about 8 minutes. Drain in colander and rinse with cold water. While the pasta is boiling stir the rest of the ingredients together well in a bowl. After the pasta is rinsed, dump it back in its pot and then dump in the mixture of the rest of the ingredients. Stir well and serve. Makes about 8 one-cup servings. Can be used as a side in smaller portions, or a main dish.

I use Nakano natural rice vinegar because it has no calories and tastes just as good as their sugary seasoned rice vinegar. I use natural peanut butter, because it has no added sugar. You can also use soy sauce instead of Bragg's Liquid Aminos, but I prefer Bragg's because it is basically the same thing as soy sauce without all the additives. The only two ingredients in Bragg's are soy beans and water, so it has no calories and less sodium than even so-called light soy sauces. You can find it in any health food store, and in the health food section of some larger markets. If you're diabetic you could substitute artificial sweetener for the brown sugar. Brown rice pasta has a lower glycemic index than regular wheat pasta.
