Coconut Lamb Curry

Ingredients
1 1/2 cup lamb1 medium sweet yellow onion, diced5 cloves garlic, minced1 green pepper, diced1 1/2 cup carrot, chopped2 cups green beans, chopped1 jalapeño pepper1 cup Low Sodium Vegetable Broth14 oz Lite Coconut Milk1 tbsp coconut oilSpices to taste: cloves, curry powder, turmeric, cumin, and coriander or whatever you like
Directions
Brown lamb in a large pot, remove lamb from pot. Add 1 tbsp coconut oil to pot along with onion, garlic, peppers, and spices, saute until onion is slightly translucent. Add carrot and cook another 5 minutes before adding green beans, continue to saute about 5 more minutes. Add lamb. Add coconut milk and vegetable broth to cover mixture in pot. Bring to boil and then reduce heat to medium and let simmer for about 20-30 minutes until vegetables are tender. Add slurry of 2 tbsp corn starch to thicken gravy if desired.

    I think this is gonna be good; I am going to modify it by adding in fennel, and sweet orange and red peppers rather than green, which tends to get bitter with cooking,and more lamb than is called for here, so will have to figure in the difference after the fact. - 1/22/11
