6 corn tortillas1 can 98% fat free cream of mushroom soup1 1/4 c Mexican cheese (Cheddar and Monterey Jack)2 chicken breasts, cubed 1 can Rotel
Brown chicken in medium skillet. In a small bowl, combine cream of mushroom soup and rotel. In a square baking dish, spread a small amount of soup mixture. Layer tortillas, chicken, soup mixture and cheese. Finish with chicken, soup mixture and cheese. Cover with foil and bake at 350 for 30 minutes. Uncover and bake 5 minutes more until cheese is golden.
