Easy Zucchini Pancakes

Ingredients
1 Egg1/3 cup Heart Smart Bisquick2 cups grated Zucchini1/8 tsp Black Pepper1/8 tsp Onion Powder
Directions
Beat egg, pepper and onion powder (can also use fresh chopped onion if you prefer). Stir in Bisquick. Stir in grated zucchini. Drop by 1/3 cupfuls on to a griddle over medium heat. This makes 5 large thicker pancakes, but you can make seven if you use a smaller amount of batter at a time.
