Baked Zucchini Parmesan Crisps

Ingredients
20 zucchini slices (This was about 3/4 of a very large zucchini)1/3 cup liquid egg substitute (or one whole egg and one egg white)2 Tbs Miracle Whip Light1/4 cup grated Parmesan1 cup Panko Bread crumbs (much better than regular bread crumbs... trust me on this)1.5 tsp seasoning salt
Directions
Preheat oven to 375 degrees and spray a large cooking sheet with nonstick spray

Mix the egg substitute and the the miracle whip until creamy. Add a tsp or so of water to thin it out a bit.

Mix the dry ingredients in a separate bowl.

Dip zucchini in egg mixture, then into the crumb mixture, place on cookie sheet until all gone.

Bake about 8 minutes (until brown on bottom), flip and bake another 5 minutes or so.

These are very savory and cheesy. We love them!

    Well, it sounds delicious, but I don't understand... How can there be 15 servings in this recipe when there are 20 slices of zucchini? Each serving is 1.33 slices of zucchini? - 3/13/12

    Well, it's a vegetable, so why dont you just cut it into 15 peices instead of 20? Problem solved. Thanks for the comment. It was very helpful.

    Eating 1 thin slice of zuccini as a serving isn't realistic, so this should not be considered a low carb recipe. Subbing almond flour for the panko crumbs would make it low carb. - 11/12/13

    This recipe took alot longer to bake then it said and the panko didnt work too good. The breading was bland. The rind on the zucchini got really bitter and tough because of having to cook it so long. - 8/15/10

    A serving is one large (like about 3 inch round) or two small ( 1-2 inch) crisps.
    So watch it, b/c those cheese calories start adding up!
