1 Large Eggplant1 Sweet Pepper (any color)3 cupes cubed sweet potato2 Zucchini squash2 tbsp grapeseed oil
Preheat oven to 425 degrees.
Cut vegetables into chunks or cubes and coat in oil. Add sea salt to taste if desired.
Put all ingredients into baking dish and cook for about 30 minutes or until soft.
