Applesauce Bread

Ingredients
1 cup all-purpose flour1 cup whole-wheat flour1/2 cup sugar1-1/2 tsp cinnamon, divided1 tsp baking soda1/2 tsp salt1/2 tsp baking powder1/4 tsp ground nutmeg2 egg whites1 egg1-1/4 cups unsweetened applesauce1/4 cup olive oil3 tablespoons 1% milk1/4 cup paked brown sugar
Directions
1. In large bowl, combine the flours, sugar, 1 tsp cinnamon, baking soda, salt, baking powder, and nutmeg. In a small bowl, whisk the egg whites, egg, applesauce, oil, and milk. Stir in dry ingredients just until moistened.
2. Transfer to a 9 in x 5 in x 3 in loaf pan coated with cooking spray. Combine brown sugar and remaining cinnamon, sprinkle over the top.
3. Bake at 350 degrees for 50-60 minutes or until a toothpick inserted near the center comes out clean. Cool for another 10 minutes before removing from pan to wire rack.

    I just made this bread last night for a meeting (I got the magazine yesterday). It was delicious! I modified it slightly, though. I used the sugar/splenda mix for both the sugar and brown sugar (you only have to use 1/2 the amt in the recipe) - you would never know the difference & its lower cal - 8/15/08
