Cinnamon Plantain

Ingredients
1 ripe plantain (dark yellow to black), medium/large6 tsps (2 tbsps) Splenda1/4 tsp Cinnamon, ground4 tbsps water
Directions
1. Slice plantain into long oval slices, about 1/2 inch thick or a little smaller. Mix Splenda and cinnamon together in a small bowl, put to the side.

2. Coat frying pan with butter flavored cooking spray, add 4 tbsps of water, add plantain, cover and cook on medium (too soften all the way thru). After they have softened proceed to step 3.

3. Using steamed plaintain or black (fully ripe) plantain, in a frying pan coat with butter flavor cooking spray, add plaintain flat side down, spray cooking spray on exposed sides...cook until nicely brown on each side.

4. When plantain is browned, sprinkle Splenda/cinnamon mix on plantain and serve.

Serve Hot!

    My husband made the mistake of buying them green so the consistency was off. But we know next time that buying them black is MUCHO IMPORTANTE!! Very good recipe, fried plantain is awesome and I'm greatful to have a lo-cal method to cook a treasured treat! - 5/24/09

    I love fried plantains, and this is a good lo-cal version. I added a little nutmeg, and sprinkled some of the sugar and spices on them while they were browning. I used raw sugar instead since I don't like splenda. - 2/11/09
