Ingredients
2 Cups (Light) Baked Beans (You can substitute baked beans for any bean of your choice)4 Slices Diet Bread2 tbs (or just enough to coat the pan) extra light olive oil (or spray oil)
Directions
Makes 4 large burgers (1 Burger is 1 serving)

Put Baked Beans in a bowl and gradually crumble the Bread into crumbs and stir in. Mix together until you can make them stick together to roll the mixture into four balls. (You can add any veg to this mixture. To add some spice add a pinch of chilli powder)
Preheat pan to a fairly high setting and add the burgers to the pan (gradually pushing them down with a spatula and tucking in the edges to keep them together) turn down the heat when the bottom becomes crispy and flip over and do the same on the next side.
Serve when hot! Things that complement them are: Mediteranean cous cous and veg and if you're being naughty maybe some chips

Would it work just as well to use cracker crumbs? I'm planning on making it tonight for my dad and myself, and that's all I have. - 7/16/10

Really delicious. I added some fresh stinging nettle leaves (simmered ahead of time, of course) to this, which made it a little more moist. I just added some extra bread and a little brown rice flour. I got rave reviews from my family! - 4/26/09
