Canned tomatoes, 2 cups canned chick peas, 2 cups chopped of each:carrots, potatos, onions, mushrooms, whole grain brown rice, and red bell peppers, 3 cloves of garlic, 2 tbsp of garam masala, 3/4 cup of water.
In a stew pot , pan fry onions and garlic until golden, then add mushrooms. Once mushrooms are soft, and all other ingredients. Stir and bring to boil. Reduce heat. Cover, boil gently for 15-20 minutes or until most of he liquid had been absorbed and rice and potatoes are tender. Stir frequently. Makes 6-8 serving
