6 cups vegetable broth (regular or low-sodium, nutrition facts calculated with regular)1/4 cup tamari (soy sauce)1/4 tsp garlic powder1/2 to 1 tsp freshly grated ginger (nutrition facts calculated with 1 tsp)1/2 lb fresh green beans, wash and with ends snapped off, sliced if desired.1/2 pound Soba (buckwheat) noodlesFreshly ground pepper (nutrition facts calculated using 1 tsp)
1. Add the tamari (soy sauce) and garlic powder to the vegetable broth and bring to simmer in a stock pot or dutch oven.
2. Add the ginger and green beans and simmer for 5 minutes.
3. Add the noodles and simmer for an additional 5-7 minutes.
4. Season to taste with freshly fround pepper.
