Native RI Johnnycakes

* White Cornmeal, 1 cup * Egg, fresh, 1 large * Milk, 2%,, about 1/3 cup * Granulated Sugar, 1 tsp * Salt, 1 dash * Water, 1 cup * Half a raw potato
Mix together cornmeal, sugar and salt in a bowl. Make a well in the middle and pour in the boiling water to scald the mixture. Let sit for a few minutes.
Beat in egg.
Start adding milk and beating well, a little at a time to make a pancake batter.
On well-warmed griddle, scour surface with the cut side of the raw potato, then drop mixture by spoonfuls on griddle.
Cook slowly to make sure middle of johnnycakes get cooked.
Serve with syrup or savory foods.
