Veggie Quiche

Ingredients
4 eggs2 cups milk1/2 cup whole wheat flour3 tbsp butter (melted)1 1/2 plus 1/2 cups cheddar cheese1 cup broccoli1 1/2 cups cauliflower1/2 cup each of red, yellow, and green peppers1/4 cup onion1/2 cup mushrooms1 cup summer squash1 cup zucchini
Directions
Chop all veggies and set aside. Mix in 1/2 cup cheese.

Blend together eggs, milk, flour, butter, and 1 1/2 cups cheese. Pour into 9 inch pie plate.

Add veggies to mixture in pie plate.

Bake at 350 degrees until done (about 1 hour).

    This quiche truly is incredible, best I think I've ever had. I didn't have broccoli and cauliflower so I used eggplant and added a touch of garlic powder. This is a definite keeper! - 8/22/08
