Zucchini Corn Pancakes

1 cup White Flour1 1/2 tsp Baking Powder1/4 tsp Ground Cumin 1 TBSP Granulated Sugar1/4 tsp Salt1/2 cup Skim Milk1 egg white1 cup grated zucchini 3/4 corn kernels (fresh or frozen)2 TBSP Butter1 TBSP Olive Oil
Mix dry ingredients in a bowl. Mix milk and egg and add to dry ingredients. Fold in zucchini and corn. In a skillet melt butter and heat olive oil. Drop batter onto skillet to form pancakes. Flip pancakes when edges start to brown and cook until both sides are golden brown.
Makes 18 pancakes; 2 pancakes per serving.
