Banana Pumpkin Bread

Ingredients
3 ripe bananas mashed4 eggs2/3 cup olive oil (or other healthy oil)2 2/3 cup pumpkin puree1 1/4 cup honey1/2 cup apple sauce5 cups spelt flour2t baking powder2t baking soda1t salt4t pumpkin pie spice2 ground cinnamon1 1/2 c rasins
Directions
Preheat oven to 350 degrees Fahrenheit and prepare 2 9x5 inch pans.

In large bowl or stand mixer combine mashed banana, eggs, oil, pumpkin, honey, and applesauce. Mix well. In another bowl combine dry ingredients and mix well. Stir the dry into the wet, just until combined. Fold in raisins. Pour batter into pans evenly.

Bake at 350 for 45 to 60 minutes or until toothpick test is clear.

Makes 12 servings per loaf for a total of 24 servings.
