Topping:1/2 cup sugar2 tbsp oil2 tsp ground cinnamon2 tbsp flourCake:3/4 cup sugar1/4 earth balanceegg replacer equal to one egg1/2 cup soy milk1 1/4 cups flour2 tsp baking powder1/2 tsp salt
preheat oven to 325F (165C). Lightly oil an 8-inch cake pan and set aside. In a small bowl, cream together the sugar and margarine. Add the egg replacer, milk, flour, baking powder, and salt and stir together gently until "just mixed". Spoon into cake pan and sprinkle evenly with reserved topping. Bake for 30-35 minutes or until toothpick or knife comes out clean. Let cool for 10-15 minutes before serving. Makes 1 cake.
