Guiltless Apple-Cinnamon Oatmeal Muffins

Ingredients
1 cup whole-wheat flour1/4 cup Sugartwin no calorie brown sugar substitute (if this cannot be obtained you can use Splenda no calorie instead)1/4 cup egg substitute1 tsp baking powder1/2 tsp salt1 cup quick-cooking oats1 cup water2 tbsp unsweetened applesauce1/4 tsp cinnamon1/2 cup apples, peeled and diced
Directions
1. Preheat oven to 425 degrees F.
2. Spray 12 muffin cups with non-stick spray, or use paper muffin liners.
3. In a medium mixing bowl sift flour, sugartwin, baking powder, salt, and cinnamon.
4. Add oats to flour mixture.
5. Add water and egg substitute to dry ingredients, stir until just mixed (batter will be lumpy).
6. Fill each muffin cup 2/3 full.
7. Bake for 10-15 minutes or until a toothpick inserted into the center of a muffin comes out clean.

    lo-cal omitted salt; left peels on apples, mixed applesauce & apples in last. I wrapped them in foil and put in plastic bag and froze. I'll cook them again; nice having chunks of apples in it. - 3/4/11
