Morrocan soup

4 tbsp veg. oil1 large onion, diced1/2 red bell pepper, diced6-8 cloves of garlic, minced1 stalk of celery, chopped fine1(14oz) can crushed tomatoes3 (15oz) garbanzo beans, rinsed1/2 cup lentils1/4 cup brown rice1 teaspoon each: cinnamon, ground gingerhandful of chopped cilantro & parsley1 1/2 quarts of water or vegetable stockpepper & salt to tastejuice of 1/2 fresh lemonblack pepper & salt
Saute onions,garlic,celery, peppers.
Add all other ingredients except for the cilantro and parsley, lemon juice.
Cover and cook on medium for 45 or until brown rice is tender.
Add pepper & salt, cilantro, parsley, and lemon juice.
This makes 6-7 servings. Freezes well.
