Meatless Chili

1.2 cups dried garbanzo beans1.2 cups dried kidney beans1 pkt chili seasoning1 can diced tomatoes1 can diced tomatoes w/green chilies2 tsp cumin*1 tsp cayenne*1 tsp powdered veg. broth**not included in nutrition information.
Night Before: Rinse beans. Soak beans overnight with 3 parts water [NO SALT].
Day Of: Boil then simmer beans with 3 parts water for about 1 hour, and check to make sure there is enough water. Add cumin, cayenne, and vegetable broth. Boil then simmer again for 1 more hour, or until soft. May need to add more water because you want the water to be about an inch above the beans after they're fully cooked.
Next, add chili seasoning and tomatoes. Simmer for atleast 30 minute. Serve with saltines & cheese or sour cream.
Makes 12+ (1 cup) servings

I do something very similar to this, only I lightly sauté onions, garlic and rough-chopped celery until softened, then add the mostly-cooked beans and other ingredients. I will also use a couple of tablespoons of tomato paste to thicken it and enhance the flavour. Yumm!!! - 12/29/08
