Lemon Roast Potatoes

Ingredients
5 Medium Potatoes1 tsp Knorr Chicken Soup Mix1/2 cup water1/4 cup Becel Light Margarine1/4 cup Lemon Juice2 tsp Minced Garlic1 tbsp Ground OreganoSalt & Pepper to taste
Directions
Preheat oven to 400F.

Wash (and peel if desired) potatoes; cut into cubes.

In a small dish, melt margarine.

In a large ziplock back, mix together the margarine, water, chicken soup mix, lemon juice, garlic, oregano, salt and pepper. Add potatoes and toss to coat.

Spread the potatoes out on a baking sheet lined with tinfoil and drizzle contents from ziplock bag on top of potatoes.

Bake in oven for 45 minutes, or until desired crispiness is reached.

Makes 6 servings.
