2 cups whole wheat pasta, cooked1/4 cup light sour cream1/4 cup light Miracle Whip1 tbsp. Dijon mustard1 cup chopped bell pepper1 cup chopped carrot1/2 cup chopped red onion (or any sweet onion)3/4 cup chopped ham3/4 cup cubed low-fat cheddar cheese (or 4 oz)
In a small bowl, combine sour cream, miracle whip, and mustard. In a large bowl, combine bell pepper, carrot, onion, ham, and cheese. Add dressing mixture and pasta to vegetable mixture and mix well. Makes 4 servings of approximately 1 1/2 cups each.
