Stone Soup

Ingredients
16 oz lean ground turkey1 medium onion, diced1 tsp minced garlic2 medium celery stalks, diced1 medium green bell pepper, diced1 can sliced carrots1 small eggplant, cubed1 can tomato sauce2 handfuls spinach, coarsely choppedwater to coversalt and pepper to tasteoreganobasilcayenne pepper powderred cooking wine
Directions
Brown turkey with onions and garlic with a dash or two of red cooking wine. Season with salt and pepper. Add in diced celery and peppers. Cook until it all starts to soften. Add tomato sauce, water, and carrots. Season to taste. Add eggplant and bring to a good boil. Cover and simmer until eggplant gets tender. Add spinach right at the last.

I use a cup of soup as a serving and its very filling. You could serve with rice, maybe pasta, and parmesean cheese is really good.
