Breakfast Quesadillas

Ingredients
2 eight-inch flour tortillas1/2 cup egg substitute1 dash black pepper1 dash cayenne pepper2 slices fresh tomato1 slice fat-free cheese1 slice onion (optional)
Directions
Heat oven to 375 degrees. Scramble egg substitute in a small skillet. Lay one tortilla on a nonstick baking sheet. Spoon cooked egg substitute on top & sprinkle with both types of pepper. Top with tomato, cheese & onion if desired. Add second tortilla on top. Press lightly. Bake for 5 minutes, flip & bake 5 more minutes or until cheese is melted. Cut into fourths to serve.
