Lighter Potato Salad

Ingredients
6 boiled eggs4 medium sized potatoes, peeled and quartered1/4 cup light mayo (or to taste)3 tbsp sweet pickle relish
Directions
Boil eggs ahead of time and set aside in fridge. Boil potatoes in pot of water until a fork slides in with very slight resistance (about 15-20 minutes once they come to a boil). Set aside to cool. Dice eggs and potato into bowl. Add mayo and relish. You can add salt and pepper if you wish, and paprika to garnish if you want to be fancy.
