Gazpacho with Spicy Croutons

Ingredients
* Red Ripe Tomatoes, 6 large whole (3" dia) (remove) * Cucumber (peeled), 1 medium (remove) * *Peppers, hot chili, red, fresh, 1 pepper (remove) * *Extra Virgin Olive Oil, 3 tbsp (remove) * *Balsamic Vinegar, 1 tbsp (remove) * Bread, mixed-grain (includes whole-grain, 7-grain), 3 slice (remove) * *Extra Virgin Olive Oil, 3 tbsp (remove) * Pepper, red or cayenne, 1 tbsp (remove) * Paprika, 1 tbsp (remove)
Directions
Croutons: Cut bread into ~2cm chunks, place on baking sheet, drizzle with olive oil, cayenne and paprika.

Soup: Whiz all other ingredients together, adding salt & cayenne to taste.

Serve soup immediately, garnished with a healthy serving of croutons.

Makes ~6 servings.
