2 cups shredded zucchini.50 cups of diced onions1 tsp minced garlic6 egg whites1 tbsp. olive oil1 tbsp. minced fresh parsleysalt and pepper to taste
Shred a zucchini with a cheese grater , use the large setting. Dice one half of a large onion. Heat olive oil in frying pan on med heat. Sautee zucchini and onion in pan. Add garlic. While that is sauteeing mince your parsley. In small bowl, whisk together egg whites and chopped fresh parsley salt and pepper. Add to pan and cook until egg is done. Makes 2 servings
