1 1/2 cups Hodgson Mills whole wheat pancake mix [3 pancakes = 1/3rd cup dry]1 egg2 tablespoons apple sauce, unsweetened1 cup soy milk (low fat, fiber enriched, preferably)
mix wet and dry ingredients together thoroughly. cook small pancakes in batches on griddle.
serve with fruit of your choice and low-cal/no-cal pancake syrup. eat and enjoy!!
