Popeye's Breakfast

Ingredients
Spinach, fresh - 2 cupsEgg substitute, liquid 1/2 cupGarlic, chopped 1/4 tsp. (optional) Black pepper, dash
Directions
Spray a small omelet pan with olive oil.
Add garlic, spinach and a Tbs of water.
Steam spinach until cooked down.
Add 1/2 cup Egg substitute and dash of pepper.

Optional - chopped onions, fresh cherry tomatoes or sun dried tomatoes.

Stir until done for a scrambled egg texture. If you prefer more of an omelet cover and cook for 1 minute and flip and cover and cook until done.
Makes 1 serving. Double ingredients and use bigger pan for addition servings.
