Ethiopian Chickpea Sauce

Ingredients

1 can of chickpeas1 medium Tomato1 small onion1 Tbsp Sunflower Oil.5 tsp dried parsley1 dash salt1 dash black pepperadd water if needed
Heat the oil in a cooking pot, cut onions & tomato in small cubes, saute the onions. Then add the tomato and fry them. Drain the water of the canned chickpeas into a cup, then pour chickpeas into the cooking pot with onions & tomatos, add the spices. Add a little from the chickpea water and boil for a few minutes.
Put into a blender and blend at high speed, add the rest of the chickpea water if needed.
It should be a thick creamy sauce.
Serves 4
Serve with stir-fry meat and tortilla or traditional Ethiopian Injera
