Moo Shu Beef

Ingredients
1 lb top sirloin, julienned1 tbsp minced ginger1 tbsp minced garlic1 cup sliced shitake mushrooms2 cups shredded white cabbage3/4 cup bamboo shoots, julienned3/4 cup black mushrooms1/2 cup hoisin sauce3 eggs, beaten1 bunch scallions, julienned4 chinese pancakes, steamedpinch kosher salt and black pepper3 tbsp extra virgin olive oil
Directions
Add oil to wok, heat to high temperature.
Quick fry (1-2 minutes) beef. Remove, strain, set aside.
Return to high heat, add eggs and scramble. Set aside with beef.
Stir-fry garlic, ginger, and shitake mushrooms until soft. (2 to 3 minutes)
Add cabbage, bamboo, black mushrooms salt and pepper. Continue to stir-fry3 more minutes.
Return beef and eggs to wok and add hoisin sauce. Remove from heat.
Steam pancakes.
Place 1/4 cup Moo Shu in middle of a pancake, roll like a burrito and serve.
