Spring Rolls

8 spring roll wrappers 1 cup nappa cabbage, shredded1 cup carrots, shredded1 cup bean sprouts1 cup scallions, shredded1 cup imitation crab2 tbsp soy sauce2 tbsp oyster sauce4 large greenleaf lettuce leaves, split in two down the center ribLarge bowl of very hot water
Mix cabbage, carrots, sprouts, scallions, soy and oyster sauce well. Set aside.
Soften one wrapper in hot water. Be careful not to burn yourself. Lay out carefully.
Add 1/2 piece of lettuce to center of wrapper. Place 3 tbsp of the veggie mixture on top of lettuce. Place 2 tbsp imitation crab on veggies, then roll all together like a burrito, tucking both ends in before rolling.
Repeat until all are rolled.
Chill for 1 hour then slice diagonally across the middle of each one.
Serve with additional soy sauce and chinese hot mustard if desired.

Were I eating all 8 rolls I might skip the sauces but spread through out 8 portions is minimal.
I'd slip the rolling in cabbage as I'm making spring rolls not cabbage rolls. Any seafood would be good in this.

This recipe looks interesting and very tasty; interesting because it is chilled rather than fried or baked. It's a bit high in sodium, but it seems like good sodium, and I'd be willing to forego any concerns about that in order to partake in this treat. I will definitely make this recipe. - 5/21/08
