Sweet Potato Salad

4 medium sweet potatoes1/4 cup sliced sweet pickles1 chopped pepper 1/4 cup chopped walnuts1/2 cup low fat mayo2 tbs lemon juice1/4 cup low fat half and half or light creamsalt and pepper to taste
Peel and cut potatoes in bite-sized pieces. Cook about 10 to 12 minutes until just tender. Add pickles, peppers and walnuts. Combine mayo, lemon juice and half and half. Pour over vegetables and mix.. Add salt and pepper as needed. Add more mayo if too dry.
Recipe makes about 8 1/2-cup servings.
You can also add 1 1/2 cups celery to the recipe.
