Almond Barley Soup

Ingredients
1/2 cup uncooked barley1 stalk celery, chopped1/2 cup chopped carrots2 tbsp. sliced almonds6 cups broth(or 6cups water, 4 bouillon cubes)1 tbsp. italian seasoning
Directions
1) Place barley in pot with enough water to cover. Bring to a boil, reduce heat, and simmer 2 hours.

2) Lightly drain barley, leaving some water. If barley has stuck to bottom of pan, rinse clean or switch to a new pot.

3) Add all ingredients. Bring to a boil and reduce heat to medium, siimmer 15 minutes. Serves 3-4.
