Baked Potato Soup

12 slices of Turkey Bacon2/3 cup butter or margarine2/3 cup all purpose flour7 cups skim milk4 baked potatoes, peeled and cubed4 green onions, chopped1 1/4 cups Cheddar Cheese1 cup low fat sour cream
Microwave bacon as per package directions. Bacon should be crisp and easy to crumble. Set aside. In a stock pot or Dutch Oven, melt the butter or margarine over medium heat. Sprinkle in flour and stir until smooth. Slowly add in milk, stirring constantly until thickened. Stir in potatoes and onions. Bring to a boil, stir frequently. Reduce heat and let simmer for 10 minutes. Stir in bacon, cheese, sour cream. Stir until cheese is melted - enjoy!
