Carribean Shrimp Salad

Ingredients
2 tbsp. grated ginger3 cloves minced garlic1 tsp crushed red peppers2 limes, juiced1 tbsp vegetable oil1/4 cup chopped cilantro1 tbsp soy sauce1 tsp granulated sugar8 oz medium cooked shrimp1 8 oz can sliced water chestnuts1 16 oz bag american (iceberg) salad1/2 english cucumber, diced1/2 cup shredded carrots
Directions
Add first 7 ingredients (through sugar) to a large bowl. Mix well. Add a pinch of salt, or to taste. Add shrimp, tossing to coat. Let sit about 10 minutes to let shrimp absorb the flavors. While you're waiting, chop water chestnuts and cucumbers and shred carrots. Add to bowl along with salad mix. Toss together and serve!
