Banana Nut Muffins

Ingredients
4 packages of instant oatmeal - Weight Control1 cup non-fat milk1 cup whole wheat flour2/3 cup Splenda brown sugar2/3 cup unsweetened applesauce1 banana, overripe and mashed2 egg whites1 tsp baking powder1/2 tsp baking soda1/2 tsp salt2 tbsp ground flax seed7 walnut halves, chopped
Directions
Preheat oven to 400 deg.

Spray muffin pan with cooking spray.

Combine the milk, egg whites, applesauce and 4 packets of instant oatmeal (I used 2 different flavors - cinnamon & spice and apples & cinnamon). Mix until combined.

In a separate bowl, whisk the dry ingredients together.

Add the wet ingredients to the dry mix until just combined. Add chopped nuts. Do not over mix the muffins or they will be tough.

Spoon the mixture into the muffin pan, forming a total of 12 muffins.

Bake for 20 - 25 minutes or until done. Remove from pan and enjoy!
